Ingredients
- Rice flour120 g
- Tapioca starch40 g
- Salt1 pinch
- Vegetable oil
- Soy sauce2 ½ tbsp
- Toasted sesame oil1 tsp
- Garlic3
- Vinegar1 tbsp
- Sugar1 tsp
- Mushroom¼ tsp
- Black pepper · ground
- Cucumber
- Cilantro · chopped
- Sesame seed · toasted
- Chile oil with sediment
- Peanut · toasted¼ cups
- Rice noodle
Instructions
- Whisk rice flour, tapioca starch and a pinch of salt in a large bowl. Slowly add the water while whisking until you have a thin batter.
- Bring a wok or frying pan filled with water to a rolling boil. Choose a pan or plate that fits snugly inside it.
- Lightly grease the base of a baking pan or plate with oil. Add about ⅓ cup of batter and tilt or shake the pan so it spreads evenly over the bottom. Stir the batter before each batch.
- Set the pan in the wok so it sits snugly or floats on the boiling water. Cover and steam for 2 to 3 minutes.
- Remove the lid and move the pan to a cold water bath. Brush the top of the noodle sheet with oil, then lift the edges with a spatula to loosen it. The noodles can be stored at this point.
- Whisk the sauce ingredients in a bowl until the sugar dissolves.
- Cut the noodles to your preferred width and place them in a bowl. Pour the sauce over and top with cucumber, sesame seeds, chile oil, toasted sesame seeds and cilantro. Mix well and serve at room temperature or cold.
