Instructions

  1. Heat the ghee in a large pan over medium heat, then add the cumin seeds and let them sizzle for about 30 seconds.
  2. Add the onion and Thai chile and cook, stirring now and then, for 4–5 minutes until the onion is golden brown.
  3. Stir in the garlic, ginger, turmeric, red chili powder, garam masala, ground cumin, cinnamon and cardamom and cook for 1–2 minutes, stirring often, until fragrant.
  4. Stir in the crushed tomato, water and curry leaves. Lower the heat to medium-low and cook for 5–7 minutes, stirring now and then, until thick and jammy.
  5. Stir in the chicken and cook for 3–4 minutes until well combined. Season with salt to taste.
  6. Fold in the cooked basmati rice and cilantro, then take off the heat and let cool completely, about 15 minutes.
  7. Take about 2 tablespoons of the cooled filling, flatten it in your palm, and place about 1 tablespoon of grated cheese in the center. Wrap the filling around the cheese and shape it into a heart, either in a heart-shaped mold or by shaping a ball and gently pinching the top. Make 10 hearts.
  8. Freeze the shaped hearts on a baking sheet for 10–15 minutes to firm up.
  9. Set up three shallow bowls: flour seasoned with salt and pepper, beaten eggs, and bread crumbs seasoned with salt and pepper. Coat each heart in flour, then egg, then bread crumbs until fully coated. For an extra-crispy coat, repeat the egg and bread crumb dip once more.
  10. Heat about 3 inches of oil in a deep pan over medium-high heat to 350°F (175°C). Fry the hearts in batches of 3 for about 2 minutes per side, until golden brown and crispy. Lift out with a slotted spoon and drain on a paper towel-lined plate.
