- Rice¾ cups
- Soy sauce1 tbsp
- Oyster sauce1 tbsp
- Sesame oil1 tsp
- Napa cabbage1
- Cucumber1
- Hot sauce2 tsp
Instructions
- Bring the water to a boil in the rice cooker.
- Remove the bones from the chicken thighs and set the bones aside. Lay the thighs flesh side up on a plate and season with salt and pepper.
- Cut two green onions in half crosswise, then split each piece lengthwise. Finely slice the remaining green onions for garnish.
- Spread half of the green onions and half of the ginger in the rice cooker's steaming rack. Place the chicken on them skin side up, then top with the remaining green onions and ginger. Cover with the lid.
- Set the steaming rack in the rice cooker and steam the chicken for 7 minutes.
- Meanwhile, heat the vegetable oil in a small saucepan and saute the garlic for 30 seconds. Pour half of the garlic oil into a small bowl.
- Put the saucepan with the remaining garlic oil back on the stove, add the rice and stir to coat it with oil. Turn off the stove.
- After the 7 minutes, lift out the steaming rack. Scoop 1½ cups (360 ml) of chicken broth out of the rice cooker, leaving ¾ cup (180 ml) in the pot. Tip the rice from the saucepan into the rice cooker, season with salt to taste, and put the steaming rack back on top to keep cooking.
- Stir the soy sauce, oyster sauce and sesame oil into the bowl of garlic oil. Set aside.
- Pour the reserved broth into a small saucepan, add the chicken bones, cover and bring to a boil. Reduce the heat and simmer for 10 minutes.
- After 10 minutes, remove the bones. Season the broth with salt and pepper to taste, add the Napa cabbage, cover and boil for 2 minutes. Turn off the stove.
- Check that the rice and chicken are cooked and the rice cooker is on keep-warm. Turn the rice cooker off. Scoop a bowl of rice onto a plate and arrange a few cucumber slices beside it.
- Cut the chicken into ½-inch pieces, place them on the cucumber, and drizzle with the garlic oyster sauce.
- Serve right away with the garlic chili sauce and a bowl of the soup.
