- Rice¼ cups
- Sugar4–6 tbsp
- Cardamom · powder½ tsp
- Unsalted nuts¼ cups
- Raisin2 tbsp
- Ghee1 tbsp
- Saffron1 pinch
Instructions
- Wash the rice a few times and drain it well.
- Pour the water (if using) and milk into a heavy-bottomed pot or Dutch oven. Bring to a boil over medium heat, then stir in the rice.
- Cook over medium to low heat for about 25 to 30 minutes, until the rice is soft and lightly mushy, stirring every 3 minutes to prevent scorching.

- Stir in the cardamom powder, saffron (optional), rose water and chopped nuts.
- Optional: fry the nuts in ghee until light golden, then fry the raisins until plump, and pour over the kheer.
- Serve in bowls, garnished with nuts and raisins. It can also be chilled before serving.
