Instructions

  1. Cut the mushrooms into large bite-sized pieces; they will shrink as they cook.
  2. Heat a tablespoon of oil in a non-stick skillet over medium heat. Saute the mushrooms for 2 to 3 minutes until fragrant, season with a pinch of salt and cook about 3 minutes more until a brown crust forms. Set aside to cool.
  3. Fill a shallow plate with water, set out a chopping board and lightly grease a large plate. Cut the rice paper in half and soak each piece in water for a count of 20. Transfer to the board; if still stiff, let it sit a few more seconds until softened.
  4. Place a piece of mushroom on each sheet, wrap it into a nugget and seal the sides. Use two pieces for smaller cuts. Move the nuggets to the greased plate and repeat with the rest.
  5. Preheat the air fryer to 390°F for 3 minutes. Lightly oil the inner rack, arrange the nuggets in a single layer, brush the tops with oil and air fry for 5 to 6 minutes, shaking halfway, until the skin turns white and crispy. Cook in batches if needed.
  6. While the last batch cooks, whisk the sauce ingredients together in a bowl.
  7. In the same skillet used for the mushrooms, add the sauce and cook over medium heat, stirring regularly, for 2 to 3 minutes until it thickens into a glaze, when large bubbles form.
  8. Add the nuggets and toss quickly until well coated. Serve immediately.
