Rich & Fudgy Tahini Brownies
Ingredientes
- Olive oil4 colheres de sopa
- Tahine6 oz
- Chocolate · chopped7 oz
- Flax seed · ground4 colheres de sopa
- Egg2
- Sugar1 xícara
- Vanilla3 colheres de chá
- Cinnamon · ground1–2 colheres de chá
- Orange juice1 xícara
- Flour⅔ xícara
- Cocoa powder3 colheres de sopa
- Salt¼ colher de chá
- Baking powder1 ½ colher de chá
Modo de preparo
- Preheat the oven to 350°F (180°C).
- Line an 8-inch (20 cm) square pan with parchment paper and grease the side that will touch the batter.
- Melt the chopped chocolate with the oil in a heatproof bowl over a double boiler or in the microwave. Whisk in the tahini and set aside to cool.
- For the vegan option, whisk the ground flax seeds with 1/2 cup (125 ml) water and let stand 5–10 minutes until thickened.
- In a large bowl, whisk the eggs (or flax egg) with the sugar until thick and pale: about 5 minutes by hand or 3–4 minutes with an electric mixer.
- Add the vanilla, orange juice and cinnamon and whisk to combine.
- In a small bowl, whisk together the flour, cocoa, salt and baking powder (use 1 teaspoon baking powder for the vegan version, otherwise 1/2 teaspoon).
- Whisk the chocolate-tahini mixture into the egg mixture until combined, then add the flour mixture in two batches, mixing until just combined.
- Pour the batter into the pan, scatter the chocolate chunks or chips on top and bake on the center rack for about 35 minutes. The center will still be very moist.
- Let cool to room temperature, then refrigerate until fully set and chilled, about 3–4 hours.
