Ridiculously Good Chicken For Tacos
Ingredients
- Chicken thigh · boneless skinless1 lb
- Soy sauce½ tbsp
- Avocado oil½ tbsp
- Garlic · grated2 cloves
- Taco seasoning2–3 tbsp
- Avocado½
- Mayonnaise½ cups
- Cheese3 oz
- Cilantro1 handful
- Lime
- Tortilla
Instructions
- Trim the fat from the chicken thighs if you like. Toss them with the soy sauce, oil and garlic, sprinkle with taco seasoning, and mix well.
- Place the chicken in an air fryer basket and air fry at 400°F for 10 to 12 minutes, until very crispy, golden and juicy.
- While the chicken cooks, blend the sauce ingredients in a small food processor or blender. If it is too thick, add more water; if too thin, add a little more avocado or mayo.
- When the chicken is done, let it rest for a few minutes, then chop or pull it into bite-sized pieces. Squeeze lime juice over it.
- Spoon sauce onto a tortilla, add a pile of chicken, and top with cilantro and diced onion.
