Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the beef into bite-size cubes. Heat 1 tablespoon oil in a large skillet over high heat and brown the beef on all sides for 6–10 minutes, seasoning with salt and pepper as you sear. Move the beef to a large baking dish.
  3. Add the onions, carrots, potatoes, mushrooms, garlic and bay leaves to the baking dish.
  4. Whisk together the water, wine, soy sauce, date syrup (or honey or maple), salt, pepper, coriander seeds, paprika and thyme. Pour over the beef and vegetables, stir gently, and cover tightly with aluminum foil.
  5. Bake 30 minutes at 400°F (200°C), then lower the oven to 350°F (180°C) and bake 3–4 hours, until the beef and vegetables are very tender.
  6. Every hour, carefully uncover and stir.
  7. During the last 20–30 minutes, uncover completely so the flavor deepens and the sauce thickens.
