roasted strawberry, basil & goat cheese crostini
Ingredients
- Goat cheese4–5 oz
- Strawberry1 lb
- Honey2 tbsp
- Extra virgin olive oil2 tbsp
- Baguette1
- Basil
- Black pepper · ground
Instructions
- Preheat the oven to 175°C (350°F) with racks in the middle and upper third. Line two large baking sheets with parchment. Let the goat cheese soften at room temperature.
- Toss the strawberries with the honey and spread in one layer on one sheet. Roast on the upper rack for 20 to 25 minutes, tossing halfway, until tender, juicy and collapsed. Watch the edges, as honey can burn quickly.
- Brush both sides of each bread slice with olive oil and place on the other sheet. Bake on the middle rack for 10 to 12 minutes, until golden on top.
- Once the toasts are cool enough to handle, spread each with goat cheese, top with roasted strawberries and their juices, then sprinkle with torn basil and black pepper. Serve immediately.
