Ingredients

Instructions

  1. Preheat the oven to 200°C (400°F, fan).
  2. Put the sweet potato, red and yellow peppers, carrots and unpeeled garlic cloves on a large baking tray.
  3. Drizzle with the olive oil, sprinkle with the salt, pepper, cumin and paprika, and toss everything together.
  4. Roast for 20 minutes, turning everything over after 10 minutes.
  5. Add the red onion wedges, toss them in the oil, then roast for a further 10–12 minutes until tender and slightly caramelised.
  6. Set aside a couple of tablespoons of the roasted vegetables. Put the rest in a large saucepan and squeeze the garlic out of its skins into the pan.
  7. Pour in the stock, bring to the boil and simmer for 5 minutes. Turn off the heat and blend until smooth with a hand blender.
  8. Stir in the parmesan and season to taste.
  9. Serve topped with the reserved vegetables, extra grated parmesan and thyme sprigs.
