S'mores Brownie Pie
Ingredients
- Graham cracker1
- Sugar1 ¼ cups
- Butter · melted6 tbsp + ½ cups
- Coconut oil · melted2 tbsp
- Egg2
- Vanilla2 tsp
- Dutch process cocoa · powder¾ cups
- Flour½ cups
- Salt¼ tsp
- Chocolate chip1 cup
- Marshmallow24–25
Instructions
- Preheat the oven to 350°F (177°C).
- In a medium bowl, combine the graham cracker crumbs and 1/4 cup (50g) sugar, then stir in the 6 Tablespoons (85g) melted butter. Break up any large chunks.
- Press the crumb mixture into an ungreased 9-inch pie dish, over the bottom and up the sides. Press just until no loose crumbs remain, without packing too hard. Run a spoon around the bottom edge to round the crust.
- Melt the 1/2 cup (113g) butter, cut into tablespoon pieces, in a large heatproof bowl in the microwave or in a small saucepan on the stove (transfer to a large bowl if using the stove). Whisk in the oil and 1 cup (200g) sugar. Let sit 3–5 minutes to cool slightly.
- Whisk the 2 whole eggs, 1 egg yolk and vanilla into the butter mixture until combined. Add the cocoa powder, flour and salt and whisk until combined. The batter will be thick. Fold in the chocolate chips.
- Spread the batter evenly into the crust right away, as it thickens quickly.
- Bake for 30 minutes. Remove the pie and arrange the marshmallows on top, pressing each one very lightly into the filling. Return to the oven and bake 3 more minutes to toast the marshmallows.
- If the marshmallows need more colour, broil for 30–60 seconds, watching closely and removing the pie as soon as they look toasted.
- Cool for at least 45 minutes on a wire rack, or closer to 2 hours for neater slices. For the cleanest cuts, use a very sharp knife dipped in hot water and wiped dry between slices.
