- Mustard oil1 tbsp
- Mustard seed1 tsp
- Cumin1 tsp
- Asafoetida
- Garlic · sliced2
- Ginger · thinly sliced1 tbsp
- Tomato · chopped2
- Spinach · finely sliced600 g
- Potato · peeled chopped4
- Salt1 tsp
- Chili pepper · finely sliced1–2
- Garam masala1 tsp
Instructions
- Heat the mustard oil in a karahi or wok and add the mustard seeds. When they pop, add the cumin seeds and asafoetida.
- Add the garlic and ginger and fry on a gentle heat. Stir in the tomatoes, salt and chillies.
- Cook down until the tomatoes have turned to a pulp, then add the potato cubes and stir to coat them with the sauce.
- Reduce the heat, cover the pan and cook for about 10 minutes, stirring occasionally. Add a splash of water if they stick, and stir gently so the potatoes don't mash.
- Once the potatoes are soft, add the spinach and stir.
- Cook for a few more minutes until the spinach has wilted. If there is liquid in the pan, increase the heat and dry the dish out.
- Sprinkle over the garam masala and serve.
