Ingredients

Instructions

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Cut the onion into thin slivers and thinly slice the garlic.
  3. Add the onion and garlic to the pan, coat them in the oil, and stir every 1 to 2 minutes until evenly sautéed.
  4. Pat the cod fillets dry on paper towels and season both sides with sea salt and black pepper.
  5. When the onions are lightly browned (about 10 minutes), add the white wine, vegetable broth, saffron, chopped parsley and the zest of half a lemon. Season with sea salt and black pepper, raise the heat to high, stir and bring to a simmer.
  6. After about 5 minutes, once the alcohol has cooked off and the saffron has infused, lower the heat to low-medium.
  7. Add the cod fillets in a single layer, gently flip each one, cover the pan and simmer for 4 to 5 minutes, until the cod is just cooked through.
  8. Remove from the heat. Serve from the pan or transfer to dishes, garnished with lemon slices and chopped parsley.
