Salisbury Steak Meatballs
Ingredients
- Breadcrumb¾ cups
- Onion½
- Ground beef500 g
- Garlic3
- Egg1
- Ketchup1 tbsp
- Beef stock1 + 2 cups
- Worcestershire sauce2 ½ tsp
- Dijon mustard5 tsp
- Olive oil1 tbsp
- Butter2 tbsp
- Mushroom250 g
- Each cooking/kosher salt & pepper½ tsp
- Flour3 tbsp
- Mashed potato
- Parsley
Instructions
- Put the breadcrumbs in a large bowl. Grate the onion over them with a box grater and mix so the onion soaks in.
- Add the rest of the meatball ingredients and mix well by hand until fully combined.
- Shape 20 to 22 balls, using about 1½ tablespoons of mixture each.
- Mix the slurry ingredients in a bowl until smooth; this will thicken the gravy.
- Heat the olive oil in a large skillet over high heat. Brown the meatballs on the outside but leave them raw inside, then move them to a plate.
- In the same skillet, still on high, melt the butter and cook the mushrooms until they start to soften, about 2 minutes. Add the salt, pepper and garlic, and cook 2 more minutes until the garlic is golden and the mushrooms are soft.
- Add the beef stock, salt, pepper and slurry, and stir to combine.
- When the liquid starts to simmer, return the meatballs and any juices from the plate. Reduce to medium so it simmers gently and cook 5 minutes, until the gravy has thickened and the meatballs are cooked through.
- Serve over mash, sprinkled with parsley if you like.
