- Flour1 tbsp
- Caper3 tbsp

Instructions
- Heat a carbon steel skillet over medium-high heat. Spray with oil, add the bok choy and sear 2 to 3 minutes.
- Add a few tablespoons of water to the pan to steam the bok choy until soft and wilted. Remove and set aside.
- Season the salmon with sea salt and pepper on both sides while the bok choy finishes.
- In the same skillet, add 1 tablespoon oil and the salmon, skin side down. Sear 5 to 6 minutes, until sear marks show and the skin lifts off the pan.
- Flip the salmon and cook 3 to 4 minutes on the other side, then set aside.
- Reduce heat to medium. Add 1 tablespoon avocado oil, 1 tablespoon butter and the shallot; cook 2 to 3 minutes.
- Add the flour, capers and white wine. Let the wine reduce to about 1/4 cup.
- Lower the heat to low, then add the remaining butter, lemon juice and parsley.
- Remove the salmon skin if desired, nestle the salmon into the sauce and let it finish cooking off the heat.
- Season the sauce to taste with sea salt and pepper, then serve with the bok choy.
