Salted Caramel Brownies Recipe
Ingredients
- Dark chocolate7 oz
- Butter11 tbsp
- Coffee1 tsp
- Sugar1 cup
- Brown sugar½ cups
- Egg3
- Salt¼ tsp + ½–1 tsp
- Cocoa powder⅓ cups
- Flour⅔ cups
- Heavy cream¼ cups
Instructions
- Preheat the oven to 180°C. Line an 8-inch (20 cm) square pan with parchment and grease it lightly.
- Melt the sugar in a medium saucepan over medium-low heat, stirring now and then, until it turns deep amber. Take it off the heat, stir in the butter until melted, then quickly whisk in the cream until smooth. Add salt to taste, return to the heat for 30 to 60 seconds to thicken slightly, then set aside to cool.
- Melt the chopped chocolate, butter and instant coffee in a heatproof bowl over simmering water until smooth. Remove from heat and let cool slightly.
- Whisk the white sugar, brown sugar and eggs until pale and fluffy, about 1 to 2 minutes.
- Slowly whisk the melted chocolate mixture into the eggs, then add the salt.
- Sift in the cocoa powder and flour and fold gently with a spatula until just combined. Do not overmix.
- Spread half the batter in the prepared pan. Spoon or drizzle the cooled caramel evenly over it, then top with the rest of the batter and smooth the surface.
- Bake for 25 to 35 minutes, until the centre is just set and a toothpick comes out with a few moist crumbs.
- Cool completely in the pan before cutting into squares.
