Instructions

  1. Put the sugar and water in a pan and heat over medium-high for a couple of minutes, until it turns a deep amber.
  2. Take the pan off the heat, add the chilled butter, cream and salt, and whisk until smooth.
  3. Pour the hot caramel into a glass jar and let it cool to room temperature.
  4. Set a mesh strainer over a bowl and line it with muslin. Pour in about 800 g of whole yogurt and let it drain for at least 12 hours, keeping it in the fridge.
  5. At the 4-hour mark, gather the muslin edges and gently squeeze out the whey.
  6. Return the yogurt to the fridge to drain for 8 more hours.
  7. After 8 hours, give the yogurt a final nudge to drain any leftover whey.
  8. Put the strained yogurt in a bowl, pour in a generous amount of caramel and whisk until smooth and lump-free.
  9. Spread the yogurt evenly in a loaf pan, wrap tightly with cling film and freeze for 4 hours.
  10. Serve with a drizzle of caramel and chocolate chips or another topping.
