Salty-Sweet Bacon Cinnamon Rolls • Tasty
Ingredients
- Milk2 cups
- Sugar1 cup
- Butter · melted, softened1 stick + 1 tbsp + 1 ½ sticks
- Yeast2 ¼ tsp
- Flour5 cups
- Baking powder1 tsp
- Salt2 tsp
- Brown sugar¾ cups
- Cinnamon · ground2 tbsp
- Bacon · cooked14
- Maple syrup½ cups
- Cream cheese · cubed softened4 oz
Instructions
- Make the dough: whisk the warm milk, granulated sugar and melted butter together; the mixture should be 100–110°F (37–43°C), so cool it slightly if it is hotter.
- Sprinkle the yeast over the mixture, whisk, and leave in a warm place for about 10 minutes until foamy.
- Add 4 cups (500 g) of flour and stir until just combined. Cover and let rise in a warm place for 1 hour, until nearly doubled.
- Meanwhile, mix the light brown sugar, 1 stick of butter and cinnamon for the filling. Set aside.
- Grease a 9-inch (22 cm) round pan generously with the softened butter.
- Add the remaining cup of flour, baking powder and salt to the dough and stir well.
- Turn out the dough and knead for at least 10 minutes, adding only as much flour as needed, until it is very smooth, no longer sticky, and springs back when poked.
- Roll into a 14-inch (35 cm) square about ½ inch (1.25 cm) thick and square the corners.
- Spread the filling evenly over the dough.
- Cut lengthwise into 7 strips about 2 inches (5 cm) wide. Place 2 bacon strips on each strip, then roll up from one short end and pinch the seam closed.
- Place 1 roll in the centre and 6 around the edges of the pan. Cover and let rise in a warm place for 35 to 45 minutes, until expanded by about half.
- Preheat the oven to 350°F (180°C).
- Bake for 35 to 40 minutes, until golden brown and cooked through. Cool for about 10 minutes.
- Icing: reduce the maple syrup in a small pot over medium-high heat by half, about 5 minutes. Cool slightly, about 5 minutes.
- Whisk the reduced syrup, cream cheese and powdered sugar until smooth and creamy. Drizzle over the rolls, spreading with the back of a spoon if desired.
