Ingredients

Instructions

  1. Preheat the oven to 180°C (360°F) and grease a 20 cm cake pan. Beat the eggs and sugar with an electric mixer until pale, fluffy and frothy. Sift the flour and cornstarch and fold them gently into the eggs with a spatula until just combined.
  2. Divide the batter into 5 equal portions and pour each into the prepared pan, smoothing the top with a spatula. Bake for 15 minutes. Meanwhile, melt the dark, milk and white chocolate together in the microwave for 2 minutes, stirring now and then.
  3. In a separate bowl, combine the peeled hazelnuts, powdered sugar, cocoa powder, milk, melted butter and the melted chocolate. Mix until smooth, then transfer to a piping bag.
  4. Make the syrup: put the water, rum and sugar in a saucepan, bring to a boil, then let it cool.
  5. Assemble: soak the first sponge layer with syrup, pipe a layer of chocolate filling evenly over it, and top with the next layer. Repeat until all layers are stacked. Soak the final layer and refrigerate for 2 hours.
  6. Make the glaze: in a saucepan over low heat, combine the fresh cream, glucose, dark chocolate and butter. Stir until smooth and glossy. Spread the glaze evenly over the cake.
  7. Pipe the word "Savoia" on top with any leftover glaze. Slice and serve once fully set.
