Savoury Dinner Pancakes

Ingredients

Instructions

  1. Preheat the oven to a very low setting to keep the cooked pancakes warm.
  2. Fry the chorizo in a frying pan on high heat for 1-2 minutes, until it starts to release its oil. Move the chorizo to a plate.
  3. In a large bowl, combine the flour, baking powder, salt and egg.
  4. Slowly whisk in the milk until you have a thick batter. Do not overmix; a few lumps are fine. Stir in three quarters of the spring onions.
  5. Mix the softened salted butter with the chopped chilli in a small bowl, then chill it until firm.
  6. Heat the butter on medium-high in a large non-stick frying pan or griddle, brushing it over the surface. Pour in blobs of batter, about 4 tbsp (1/4 cup) each.
  7. Fry for 1 1/2-2 minutes, until bubbles appear on top. Scatter the chorizo and cheese over the pancakes, flip them, and cook for another 1-2 minutes until cooked through. Cook in batches, keeping finished pancakes warm in the oven. The batter makes 12 pancakes.
  8. Stack the pancakes and top with the crispy bacon, the reserved spring onions, a spoonful of chilli butter and a drizzle of golden syrup.
