Ingredients

Instructions

  1. In a stand mixer bowl, combine the bread flour, sugar, yeast, salt and baking powder if using.
  2. With the dough hook on low speed, slowly add the water and mix until no dry flour remains.
  3. Add the softened butter and mix until incorporated and smooth, 8 to 10 minutes. If too wet, add flour one tablespoon at a time; if too dry, add water one tablespoon at a time.
  4. Cover tightly and proof until doubled in size, 40 to 60 minutes depending on the weather.
  5. Peel the potatoes and cut into 1 cm cubes. Soak in water for 5 to 10 minutes, then drain, rinse and pat dry.
  6. Heat a large nonstick skillet over medium heat with the oil. Sauté the onion until translucent, 3 to 5 minutes. Add the potatoes and cook about 5 minutes until slightly translucent.
  7. Add the curry leaves, sambal, curry powder, sugar and salt and toss. Add the water, peas and carrots, and umami seasoning, then cover. Simmer on medium-low until the potatoes are fork tender, 5 to 10 minutes, adding water if needed.
  8. Taste and adjust with more sambal or salt if needed. Fold in the peas and carrots, turn off the heat, and let the filling cool completely to thicken.
  9. Grease an 8x11-inch baking pan generously with softened butter. A larger pan gives flatter, less fluffy buns.
  10. Divide the proofed dough into 6 equal pieces. Knead each to remove air bubbles and shape into a ball.
  11. Flour a rolling pin and flatten a ball with your palm, then roll into a 5 to 6-inch circle, keeping the middle thicker than the edge. A larger circle gives a thinner bun.
  12. Place a portion of filling in the middle of each circle, bring up the sides and pinch to seal. Place seam side down on the greased pan, evenly spaced. Cover and rest 15 minutes while heating the oven to 375°F.
  13. Whisk the milk and maple syrup together for the vegan egg wash.
  14. Brush the buns with egg wash and sprinkle with sesame seeds.
  15. Bake 25 to 35 minutes until the tops are golden brown. Optionally brush with melted butter while warm for a shinier finish.
