Sesame Apricot Tofu
Ingredients
- Extra firm tofu1
- Cornstarch2 tbsp
- Soy sauce2 tbsp
- Olive oil2 tbsp
- Apricot⅓ cups
- Rice wine vinegar1–2 tbsp
- Cumin · powder½ tsp
- Garlic · grated1–2 cloves
- Salt¼ tsp
- Rice1 cup
- Green bean12 oz
- Toasted sesame oil1–2 tbsp
- Chive¼ cups
Instructions
- Cut the block of tofu in half horizontally, then cut each half horizontally again if it is extra firm. Press out the water between paper towels under a few heavy books for a few minutes.
- Whisk the sauce ingredients together.
- Tear each tofu piece by hand into small chunks. Put them in a bowl, toss with soy sauce and one or two teaspoons of olive oil, then sprinkle with cornstarch and toss gently to coat.
- Cook the rice according to the package directions. Cook the green beans by your preferred method (steam, microwave or sauté).
- Heat the olive oil in a nonstick skillet over medium-high heat. Add the tofu and leave it undisturbed for a few minutes per side, flipping until the whole batch is browned and crispy, which can take 10-15 minutes.
- Add the sauce to the tofu and remove the pan from the heat; the sauce will coat the tofu right away.
- Top with chives and/or cilantro and sesame oil. Serve with rice and green beans, and season with more salt and plenty of black pepper to taste.
