Sesame Beef and Broccoli
Ingredients
- Beef · thinly sliced1 lb
- Broccoli1 head
- Vegetable oil2 tbsp
- Garlic · thinly sliced minced3 cloves
- Ginger · peeled grated sliced1
- Rice1 ½ cups
- Scallion · thinly sliced
- Soy sauce¼ cups
- Brown sugar⅓ cups
- Sambal1 tbsp
- Rice wine vinegar1 tbsp
- Sesame oil1 tbsp
- Cornstarch1 tbsp
Instructions
- Freeze the beef for 30 minutes to 1 hour to make slicing easier, then slice it against the grain into very thin strips.
- Toss the beef with a generous pinch of coarse salt and let it rest while you prepare the other ingredients.
- Whisk the sauce ingredients together.
- Cook the rice according to the package directions.
- Heat a large heavy skillet over medium heat with a swish of oil. Working in batches, lay the beef in a single layer and leave it undisturbed for a minute or two to brown. Flip each piece and cook until browned. Remove the beef from the pan.
- Add a swish of oil to the same pan. Stir-fry the broccoli for 2-3 minutes, until bright green. Remove it from the pan.
- Lower the heat and let the pan cool a little. Add one last swish of oil, then the ginger and garlic, and sauté for 1-2 minutes.
- Add the sauce and stir until it thickens and turns sticky. Return the beef and broccoli to the pan and toss gently to coat.
- Serve with the rice, sliced green onions and sesame seeds.
