Instructions

  1. Preheat the oven to 350°F. Line the base of an ungreased 9-inch springform pan with a ring of parchment paper.
  2. Beat 6 room-temperature eggs on high for 1 minute until foamy. Gradually add 1 cup sugar and beat on high for 8 to 10 minutes, until thick and a ribbon forms when the whisk is lifted.
  3. Meanwhile, peel, core, quarter and cut the apples into 1/4-inch slices.
  4. Whisk 1 1/3 cups flour with 1/2 tsp baking powder. Sift it into the egg mixture in 3 additions, folding with a spatula between each, scraping the bottom of the bowl, until no streaks of flour remain. Quickly fold in 1 tsp vanilla.
  5. Fold in the apple slices, keeping 1 cup aside for the top. Pour into the pan, spread evenly with a spatula without tapping the pan, and scatter the reserved apple over the top.
  6. Bake at 350°F for 50 to 55 minutes, until the top is golden brown.
  7. Rest in the pan for 15 minutes, loosen the edges with a thin knife, then move to a platter to cool to room temperature. Dust with powdered sugar before serving.
