Ingredients

Instructions

  1. Bring 2½ cups of water to a boil in a pot.
  2. Heat the ghee in another pot. When hot, fry the cashews until light golden, then add the raisins and fry until they swell. Remove them to a plate.
  3. Add the suji to the ghee and fry on medium heat, stirring constantly, until golden. Fry a few minutes longer for a deeper roast if you like.
  4. Pour the boiling water into the roasted suji carefully, stirring constantly as it splatters.
  5. Keep the heat at medium and stir until all the water is absorbed and the mixture is thick.
  6. Cover and cook on low heat for 1 to 2 minutes.
  7. Stir in the sugar and cardamom powder until the sugar dissolves. The mixture will turn gooey, then thicken again within a minute.
  8. Keep stirring until it begins to pull away from the pan.
  9. Let it cool slightly, fluff with a spatula, and serve garnished with the cashews and raisins.
