Sheera | Sooji Halwa
Ingredients
- Fine sooji1 cup
- Ghee½ cups
- Banana1
- Milk2 cups
- Saffron1 pinch
- Sugar⅔ cups
- Cardamom · ground¾ tsp
- Chopped nuts¼ cups
- Raisin¼ cups
Instructions
- Add the ghee and sooji to a pan and roast over medium heat for 8–10 minutes, stirring constantly, until the sooji turns light golden and smells fragrant.
- Lower the heat. Add the banana and mash it with the back of a spatula as you stir it in.
- Heat the milk and water in the microwave until hot but not boiling, about 3 minutes. Pour it into the pan slowly, stirring constantly, as it will steam and may splatter.
- Once the liquid is fully mixed in, add the saffron. Cover and cook on low for 5 minutes, until the sooji has absorbed all the liquid.
- Add the sugar, cardamom and half the nuts. Mix well, cover and cook on low for 5 minutes. It will thicken as it cools.
- Garnish with the remaining nuts and the raisins.
