Ingredients

Instructions

  1. Preheat the oven to 475°F (246°C).
  2. Cut the beef flap into 2 to 3 large pieces.
  3. Whisk the olive oil, lemon zest and juice, vinegar, garlic, oregano, salt, pepper and red pepper flakes in a large bowl. Add the cumin as well, if using.
  4. Add the beef, toss to coat, and marinate for 20 to 30 minutes at room temperature, or up to 24 hours in the refrigerator.
  5. If using vegetables, toss the peppers and onion with 1 tablespoon olive oil and a pinch of salt and pepper, then spread them on half of the sheet pan.
  6. Lift the beef from the marinade, letting the excess drip off, and lay it in a single layer on the other half of the pan.
  7. Roast for 7 to 8 minutes, flip the beef, then broil for 7 to 8 minutes more, until browned and 130 to 135°F (54 to 57°C) for medium-rare, or to your liking.
  8. Rest the beef on a board for 5 to 10 minutes, then slice it thinly against the grain.
  9. Warm the pitas. Serve the steak in pitas with tzatziki, onion, tomato, lettuce, feta and pepperoncini, with lemon wedges on the side. For bowls, serve over rice or orzo with cucumber, olives, pepperoncini and a drizzle of tzatziki.
