Ingredients

Instructions

  1. Mix the tofu skin seasoning in a bowl. In another bowl, whisk the sauce ingredients until the sugar dissolves. Set both aside.
  2. Cut the thawed tofu skin into strips about 2.5 to 4 cm (1 to 1.5 inches) wide and soak them in the water for about 2 minutes, until soft and stretchy.
  3. Squeeze the strips to remove as much water as possible, keeping them moist but not wet, then toss them with the seasoning until evenly coated.
  4. Cut the sugar cane sticks to 10 to 13 cm (4 to 5 inches) long and about 1 cm wide.
  5. Mix 2 tablespoons of cornstarch with 1 tablespoon of water to make a thick slurry.
  6. Divide the strips into 10 portions of about 80 g each. Brush 3/4 of a stick with slurry, then wrap a portion of tofu strip tightly around it, overlapping each layer, and shape it into a drumstick.
  7. Wrap each drumstick tightly in a 15 x 23 cm (6 x 9 inch) sheet of plastic wrap, folding and twisting the ends to secure it.
  8. Refrigerate for at least 30 minutes until firm.
  9. Unwrap the drumsticks and brush them with the sauce. Let them rest for 1 to 2 minutes.
  10. Preheat the air fryer to 163°C (325°F) for 2 minutes.
  11. Grease the rack, place the drumsticks slightly apart, working in batches if needed, and air fry for 6 to 8 minutes, flipping halfway.
