#shorts Air Fryer Donuts
Ingredients
- Yeast1 ½ tsp
- Milk½ cups
- Sugar3 tbsp + 1 cup
- Flour2 cups
- Salt½ tsp
- Cardamom · ground1 tsp
- Butter7 tbsp
- Egg1
- Saffron1 pinch
- Lemon1 tbsp
- Pistachio · thinly sliced2 tbsp
- Dried rose petals1 tbsp
Instructions
- Warm the milk in the microwave for 30 seconds, then check it with a thermometer; it should be lukewarm, about 100°F.
- Stir in the yeast and ½ teaspoon of sugar, and let it stand 10 minutes until foamy. If it does not foam, the yeast may be too old or the milk too hot, and you may need to start over.
- Mix the flour, salt, cardamom and the remaining sugar in a medium bowl.
- Whisk the yeast mixture, melted butter and egg in a large bowl, then add the dry ingredients and mix until combined.
- Knead by hand until smooth. If too sticky to form a ball, add up to 1 tablespoon of flour, but keep the dough soft.
- Oil or line the Instant Pot insert, put the dough in, cover with a non-locking lid and proof on yogurt (low) for about 30 minutes, until doubled. If not doubled, give it 10 more minutes. Without an Instant Pot, cover and keep in a warm place for 1 hour or until doubled.
- Knead the risen dough, dusting with up to 1 tablespoon flour if needed. Roll to a 9 x 9 inch round, ½ inch thick. Cut disks with a 2.5-inch cutter and cut a 1-inch hole in each using a small cutter or bottle cap.
- Place donuts and holes on parchment-lined trays, re-knead the scraps and cut more. Cover and proof in a warm place (not hot) for 30 to 40 minutes, until doubled and airy.
- Preheat the air fryer to 350°F. Spray the basket, add 4 donuts and 4 holes, lightly spray with oil and cook at 330°F for 4 minutes.
- Meanwhile, melt the butter in a medium saucepan, take off the heat, then stir in the powdered sugar until smooth. Add the bloomed saffron and lemon juice, then add hot water 1 tablespoon at a time until thin but not watery.
- Dip the top of each donut in the glaze with a fork, set glaze-side up on a rack, sprinkle with pistachios and rose petals, and let harden about 10 minutes. For a softer donut, dip the whole donut and coat it well.
