#shorts Easy Fig Jam
Ingredients
- Fig1 lb
- Sugar¾ cups
- Lemon · juiced1
Instructions
- Rinse and dry the figs. Remove the stems, cut each fig in half, then slice each half into six small pieces.
- Put the figs, sugar, lemon juice and water in a heavy-bottomed pan. Heat over medium, stirring now and then, until it boils and the sugar has fully dissolved.
- Once boiling, lower the heat and simmer for 15 to 20 minutes, stirring now and then, until the figs break down, soften and the mixture thickens.
- Check doneness with a digital thermometer: it should reach 120°F. Or lift some with a spatula and let it drop; the last drops should be thicker and fall more slowly.
- Turn off the heat and let it cool. Mash with a potato masher or blend with a hand blender to the texture you like.
- Spoon into a glass jar and let it cool to room temperature, then refrigerate. Makes about 10 ounces; keeps up to 2 months in the fridge.
