#shorts Gajar Ka Halwa | Carrot Halwa
Ingredients
- Carrot2 lb
- Milk4 cups
- Sugar1 cup
- Ghee4 tbsp
- Cardamom · powder1 tsp
- Cashew · chopped2 tbsp
- Pistachio · chopped2 tbsp
Instructions
- Rinse and dry the carrots, peel them, trim both ends, and grate them by hand or in a food processor.
- Melt half the ghee in a heavy-bottomed pan, add the grated carrots and cook over medium heat for about 5 minutes, until they turn a brighter orange.
- Add the milk and cook over medium heat, stirring often. Scrape down the milk solids that form on the sides of the pan and stir them back in. Keep stirring so the milk does not stick to the bottom, until about 90% of the milk has evaporated (this can take 50 minutes to an hour).
- Add the sugar, remaining ghee, cardamom powder and half the chopped nuts, and mix well. The halwa will look watery at first.
- Keep cooking for 5 to 10 minutes, until the halwa thickens and most of the remaining milk has evaporated. Turn off the heat.
- Top with the remaining nuts and serve warm or cold.
