- Yoghurt2 ¾ cups
- Salt4 ½ tsp
- Chicken2 lb
- Ghee4 tbsp
- Onion3
- Bay leaf2
- Rice3 cups
- Milk1 tsp
- Egg6
- Jalapeño chili · sliced1
- Tomato2
Instructions
- Mix garam masala, ginger paste, garlic paste, Kashmiri red chili powder, turmeric, mint leaves, half of the chopped cilantro, lemon juice, yogurt and salt. Add the chicken, coat well, and refrigerate for at least 30 minutes.
- Meanwhile, wash the basmati rice, soak it in water, and set aside for 20 minutes.
- Set the Instant Pot to Saute (Hi). When it shows hot, add half the ghee and the thinly sliced onions. Cook, stirring often, for 10 minutes until golden brown and caramelized. Remove half the onions and set aside for garnish. (Air frying the onions also works.)
- Add the remaining ghee, the caramelized onions still in the pot, the sliced jalapeno if you want extra heat, the bay leaves, half the marinated chicken and the marinade liquid. Press Cancel. Mix well, scraping the bottom of the pot to lift all the browned bits so the pot does not give a BURN signal. Once the pot is clean, stir in the remaining chicken.
- For bone-in chicken: close the lid, set the valve to sealing, pressure cook on Manual/Pressure Cook (Hi) for 4 minutes, then quick release. Mix well, scraping the bottom again.
- For boneless chicken thighs instead: cook on Saute for 2 to 3 minutes and scrape the bottom of the pot clean.
- Drain the rice and pour it gently over the chicken. Add the 2 teaspoons salt and the 3 cups water, and push the rice under the liquid without stirring. Close the lid, set the valve to sealing, pressure cook on Manual/Pressure Cook (Hi) for 6 minutes, then quick release.
- Open the pot. If the top rice looks raw, fluff it. Gently mix the rice with the chicken from the bottom using a silicone spatula so the grains stay whole.
- Garnish with the reserved onions, the saffron milk and the remaining cilantro. Serve with the raita, hard-boiled eggs and lemon wedges.
- For the raita: whisk the yogurt in a medium bowl, add the diced onion, tomatoes and salt, mix well, and top with cilantro.
