#shorts Instant Pot Chicken Tikka Masala (Quick & Easy)
Ingredients
- Chicken breast1 ½ lb
- Salt2 ½ tsp
- Lemon1 tbsp
- Yoghurt2 tbsp
- Chili powder2 tsp + 1–2 tsp
- Garam masala1 tsp + ½–1 tsp
- Ginger3 tsp
- Garlic3 tsp
- Oil for basting1 tsp
- Butter or oil2 tbsp
- Onion2
- Tomato3
- Turmeric · ground¼ tsp
- Cream½ cups
- Fenugreek1 tbsp
- Cilantro½ cups
Instructions
- Make 2 to 3 slits in the chicken breasts. Rub them with salt and lemon juice.
- Mix the yogurt, red chilli powder, garam masala, ginger and garlic. Coat the chicken evenly and marinate for 20 minutes, or refrigerate for longer (4 to 5 hours or overnight works well).
- Set the Instant Pot to Sauté and heat the butter or oil. Add the onions and sauté for 2 minutes. Add the ginger and garlic and mix well.
- Add the tomatoes, turmeric, salt, red chilli powder and garam masala and mix well. Press Cancel, then add 2 tablespoons of water. Deglaze the pot if needed.
- Place the tall trivet in the pot and set the marinated chicken on it. Brush the chicken with oil. Close the lid with the valve set to sealing. Pressure cook for 8 minutes, then release pressure naturally for 10 minutes.
- Open the pot and remove the chicken and trivet. Blend the sauce smooth with an immersion blender.
- Stir in the cream and fenugreek leaves.
- Optional: broil the chicken in a preheated oven for 5 minutes to get char marks. Cut into 2-inch pieces and add to the sauce.
- Set the Instant Pot to Sauté and bring the curry to a gentle boil. The sauce thickens as it cools. Garnish with cilantro.
