Ingredients

Instructions

  1. Bring the water to a gentle boil in a medium pot, then add the salt and flour.
  2. Turn off the heat and mix well with a slotted spoon. Cover and rest for 5 minutes.
  3. Knead the dough in a bowl until smooth, then divide it into 4 balls and cover them with a damp paper towel.
  4. Preheat the pan on low-medium heat. Coat one ball in the dry flour and roll it into a 6-inch circle on parchment paper.
  5. Place the roti on the pan and brush the top lightly with water. Cook for 2 to 3 minutes, until the water has dried.
  6. Flip with a flat spatula and cook the bottom for 3 to 4 minutes, until fully cooked with light golden spots.
  7. Flip again, on the pan or over the flame, until the roti puffs up. On the pan, press gently with a clean towel to help it puff.
  8. Move to a plate and brush with ghee if you like. Repeat with the remaining balls.
  9. Stack the roti and wrap them in paper towels or a clean kitchen towel to keep them soft.
