Ingredients

Instructions

  1. Line a large bowl with a double layer of cheesecloth, pour in the yogurt, gather the corners and tie into a tight bundle. Hang it to drain for 5 to 6 hours, or set it in a colander with a heavy weight on top and drain overnight in the fridge, until thick and noticeably firmer than Greek yogurt.
  2. Transfer the strained yogurt to a large bowl and whip for about 5 minutes until smooth, creamy and lump-free.
  3. Add the powdered sugar and mix for another 5 minutes until fully incorporated and silky.
  4. Add the mango pulp and mix for about 5 minutes until smooth and creamy.
  5. Garnish with saffron strands, cover and refrigerate for at least one hour or overnight.
  6. Just before serving, stir gently so the saffron colour swirls through.
