Ingredients

Instructions

  1. Dry-roast the sesame seeds in a heavy pan over medium heat for about 5 minutes, until light brown and fragrant. Move them to a bowl.
  2. In the same pan, add the sugar, ghee and salt, and the cardamom. Cook over medium-low heat, stirring often and breaking up lumps, for about 6 to 8 minutes, until the sugar fully melts into a syrup.
  3. Turn the heat to low, add the roasted sesame seeds and stir quickly to combine.
  4. Quickly pour the mixture onto parchment paper and spread it as thin as possible while hot, using a greased spatula or a greased rolling pin.
  5. While still warm, cut it into diamond or square shapes with a pizza cutter or knife.
  6. Let it cool, lift it off the parchment and break along the cuts.
  7. Once completely cool, store in an airtight container.
