#shorts Traditional Shrikhand Recipe
Ingredients
- Yoghurt2 lb
- Sugar¾ cups
- Cardamom · powder½ tsp
- Saffron2 pinches
- Milk2 tsp
- Pistachio1 tbsp
Instructions
- Set a strainer over a medium bowl and line the strainer with cheesecloth.
- Pour the yogurt onto the cheesecloth, gather the ends, twist gently so liquid starts to drip, and place a heavy weight on top. Let it drain for 6 to 8 hours.
- Reserve the roughly 2.5 cups of drained whey for baking or dough.
- Warm the milk in the microwave for 10 to 15 seconds, add the saffron and let it bloom.
- Put the thick strained yogurt in a dry bowl, add the bloomed saffron and mix quickly.
- Add the powdered sugar and mix with a slotted spatula for 5 to 10 minutes until fully combined.
- Add the cardamom and mix again.
- Garnish with more saffron and sliced pistachios, then refrigerate for at least 30 minutes.
- Before serving, gently mix the shrikhand, as the saffron will bleed orange colour as it chills.
