- Turmeric · ground½ tsp
- Coriander seed · ground2 tsp
- Cilantro½ cups
- Olive oil1 tbsp
- Mayonnaise¼ cups
- Sriracha sauce2 tbsp

- Lettuce6
- Tomato1
Instructions
- Cut the steamed potatoes into 4 to 5 pieces each and put them in a large bowl. Mash the sweet potatoes.
- Pat the black beans dry with paper towels. Add them to the bowl and mash only about half, so some stay whole.
- Add the red onion, cilantro, ginger, garlic and green chili. Add the turmeric, salt, ground coriander and garam masala. Mix well with a rubber spatula.
- Mix in the oat flour a little at a time, adding more as needed until the mixture holds together. Add the oil and mix well. The mixture can be refrigerated at this stage.
- Flatten the mixture evenly in the bowl, then divide it into 6 portions. Shape each into a 4-inch patty, lightly oiling your hands if needed. Place the patties on a parchment-lined tray. Patties can be refrigerated for up to 24 hours.
- To pan-fry: heat a non-stick pan or griddle over medium heat with 2 teaspoons of oil. Cook 2 to 4 patties at a time for 4 to 5 minutes per side on low-medium heat, until both sides are golden brown and crisp.
- To bake: preheat the oven to 375 degrees. Spray both sides of the patties with oil and bake for 25 to 30 minutes, flipping halfway through.
- To air-fry: preheat the air fryer to 400 F for 5 minutes. Spray the basket with oil, add 2 to 4 patties, spray them lightly with oil, and air-fry at 370 F for 8 to 10 minutes.
- For the sauce, whisk together the mayonnaise and sriracha in a small bowl.
- To assemble, cut the buns in half, brush both sides lightly with olive oil, and toast on a griddle until the insides are golden. Layer lettuce, a patty, onion and tomato on the bottom bun, drizzle with sriracha mayo, and add the top bun.
