Ingredients

Instructions

  1. In a medium bowl, mix the shrimp, 1 tsp cornstarch, 1/4 tsp salt and 1/4 tsp pepper. Let marinate at room temperature for 10 minutes.
  2. Heat a large non-stick skillet over medium-high heat. When a drop of water sizzles and evaporates, swirl in 2 Tbsp oil and spread the shrimp in a single layer. Cook 1 minute per side, until cooked through and opaque. Transfer to a bowl.
  3. Over medium heat, add the beaten eggs to the same skillet. Break them up with a spatula and cook until no longer runny. Transfer to a bowl.
  4. Wipe the skillet with a paper towel and return it to medium-high heat. Add 1 Tbsp oil and the green onion, and cook until fragrant, about 30 seconds.
  5. Stir in the rice, spread it evenly over the pan and cook 1 to 2 minutes without disturbing, then stir and saut茅 another 1 to 2 minutes, until it sizzles.
  6. Drizzle over the soy sauce (or add to taste) and stir well. Add the sesame oil and thawed vegetables and mix well.
  7. Return the shrimp and eggs to the pan and mix. Cook, stirring often, until the rice is hot and sizzling. Add more soy sauce to taste if desired.
