Shrimp Fried Rice (Quick & Flavorful)
Ingredientes
- Shrimp1 lb
- Cornstarch1 colher de chá
- Salt¼ colher de chá
- Black pepper · ground¼ colher de chá
- Olive oil3 colheres de sopa
- Egg4
- Scallion¼ xícara
- Rice5 xícaras
- Carrot · frozen12 oz
- Molho shoyu2 colheres de sopa
- Sesame oil1 ½ colher de chá
Modo de preparo
- In a medium bowl, mix the shrimp, 1 tsp cornstarch, 1/4 tsp salt and 1/4 tsp pepper. Let marinate at room temperature for 10 minutes.
- Heat a large non-stick skillet over medium-high heat. When a drop of water sizzles and evaporates, swirl in 2 Tbsp oil and spread the shrimp in a single layer. Cook 1 minute per side, until cooked through and opaque. Transfer to a bowl.
- Over medium heat, add the beaten eggs to the same skillet. Break them up with a spatula and cook until no longer runny. Transfer to a bowl.
- Wipe the skillet with a paper towel and return it to medium-high heat. Add 1 Tbsp oil and the green onion, and cook until fragrant, about 30 seconds.
- Stir in the rice, spread it evenly over the pan and cook 1 to 2 minutes without disturbing, then stir and sauté another 1 to 2 minutes, until it sizzles.
- Drizzle over the soy sauce (or add to taste) and stir well. Add the sesame oil and thawed vegetables and mix well.
- Return the shrimp and eggs to the pan and mix. Cook, stirring often, until the rice is hot and sizzling. Add more soy sauce to taste if desired.
