Shrimp Saganaki - How I Make The Most Flavorful One Pan Shrimp Dish

Ingredients

Instructions

  1. Pat the shrimp dry. Toss them with 2 tablespoons of the olive oil, the baking soda, crushed red pepper flakes, and salt. Let sit at least 10 minutes.
  2. Heat a large oven-safe cast iron or stainless steel pan with the remaining olive oil to slightly above medium heat. When shimmering, sear the shrimp 30 seconds per side, in batches so they don't crowd. Transfer to a plate and cover loosely with foil.
  3. Set an oven rack to the second-highest position and preheat the broiler.
  4. In the same pan over medium heat, add the olive oil and onion. Cook until soft, about 7 minutes. Add the garlic and cook 1-2 minutes more, until fragrant.
  5. Add the red pepper flakes and cook 30 seconds. Add the ouzo or white wine and bring to a boil. When most of the liquid has evaporated, add the tomatoes and bring to a lively simmer.
  6. Stir in the oregano and honey and simmer 5-10 minutes until some liquid has evaporated. Taste and season with salt and pepper if needed, going light on salt.
  7. Add the shrimp to the sauce, then top with feta and kalamata olives. Broil about 6 minutes, until the shrimp are cooked through and the cheese has melted.
  8. Remove from the oven, sprinkle with parsley, and spoon the shrimp and sauce onto plates. Serve with lemon wedges and pita.
