Ingredients
- Extra firm tofu140 g
- Cabbage40 g
- Carrot20 g
- Apple½
- Scallion½ sticks
- Mayonnaise2 tbsp
- Salt
- Sriracha sauce
- Flour½ cups
- Soy sauce1 ½ tbsp
- Panko½ cups
- Burger bun2
- Avocado oil1 cup
- Sesame seed1 tsp
Instructions
- Cut the extra firm tofu block into thick patties.
- Thinly slice the purple cabbage. Cut the carrot and apple into thin matchsticks. Finely chop the green onion.
- Mix the vegetables with the mayo, a pinch of salt and the sriracha in a bowl, then set the slaw aside.
- In a small bowl, whisk the flour, soy sauce and water until it is fairly thick.
- Pour the panko into another small bowl.
- Dip the tofu into the flour mixture, then transfer it to the panko and coat it.
- Slice the buns in half and toast them cut side down in a dry pan over medium heat for about 1 minute per side. Move them to a cooling rack.
- Add the avocado oil to the frying pan and let it heat for a few minutes. It is ready when a bamboo chopstick placed in it gives fast-moving bubbles.
- Carefully fry the breaded tofu for about 2 to 3 minutes per side, then rest it on a paper towel-lined plate.
- Put leafy greens on the bottom bun, then add the tofu katsu and a generous scoop of slaw. Top with the toasted sesame seeds and serve.
