Preparación
- Off the heat, put 1 cup milk in a medium saucepan and sprinkle 1 packet gelatin over the top. Let stand 3-5 minutes until softened.
- Set the pan over medium-low heat and stir until the gelatin dissolves and the mixture steams, about 4-5 minutes. Do not boil.
- Add 2 cups heavy cream, 1/2 cup plus 1 Tbsp sugar, 1 tsp vanilla and a pinch of salt. Stir about 5 minutes until the sugar dissolves and the mixture steams. Do not boil.
- Remove from heat and let cool 5 minutes.
- Put 1 cup sour cream in a medium bowl with a pouring lip. Whisk constantly while gradually adding the warm cream until completely smooth. Strain through a fine mesh sieve if desired.
- Quickly divide into 6 glass cups or 8 ramekins. Refrigerate 4 to 6 hours until fully set.
- For the sauce, combine 1 cup berries, 1/2 Tbsp lemon juice and 1/4 cup sugar in a small saucepan. Bring to a low boil and cook 4-5 minutes until syrupy.
- Stir in the remaining 1 cup fresh berries and remove from heat. Once the syrup is room temperature or just barely warm, spoon it over the chilled panna cottas.
