Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 13x9-inch glass or ceramic dish with butter.
  2. In a large skillet over medium heat, melt the butter. Add the apples, brown sugar, flour, lemon juice, cinnamon and salt and stir until combined.
  3. Add the water and stir frequently for 5 minutes, until the sugar is mostly dissolved and the apples are coated.
  4. Remove from the heat and stir in the vanilla extract.
  5. Pour the apple mixture into the dish and spread it evenly.
  6. In a large bowl, whisk together the flour, brown sugar, baking powder and salt.
  7. Add the melted butter and heavy cream and stir until just combined; do not overmix or the topping will be tough.
  8. Dollop the topping evenly over the apples with two spoons, spreading lightly so there are no large mounds. Some gaps are fine.
  9. Whisk the granulated sugar and cinnamon together and scatter over the topping.
  10. Bake on the center rack at 350°F (175°C) for 28–30 minutes, until the liquid is bubbling and the topping is cooked through. A toothpick inserted into the centre should come out without wet batter.
  11. Let cool for about 10 minutes before serving.
