Simple apple pie (anyone can make!) 🥧
Ingredients
- Apple35.27 oz
- Salt¾ tsp
- Brown sugar3 tbsp
- Cornstarch2 tbsp
- Lemon½
- Cinnamon · ground1 tsp
- Ginger · ground½ tsp
- Flour2 ½ cups
- Vegan butter7.9 oz
- Sugar4 tsp
- Cream1 tbsp
Instructions
- Put the apple slices and salt in a large bowl and microwave at 600 W for 5 minutes. Stir, microwave for another 5 minutes, then drain off any liquid released.
- Mix the brown sugar, cornstarch, lemon juice, cinnamon and ginger into the apples. Set aside to cool.
- Put the flour, butter, sugar and salt in a food processor and pulse until the butter is broken into pea-sized pieces.
- Add half the water and pulse a few times. Add the rest of the water and pulse until a dough forms.
- Turn the dough out onto a bowl or floured surface. Gently work in any loose bits by hand, without overworking it, then divide into two and roughly shape each into a ball.
- Put one ball between two large sheets of lightly floured parchment and roll to a circle about 1/8 inch (¼ cm) thick, roughly 4 cm wider than your pie plate. Repeat with the second ball.
- Dust both rolled sheets with flour, then chill them in the fridge for at least 30 minutes.
- Preheat the oven to 350°F (180°C). Peel one parchment sheet off the dough and flip the dough into a 9-inch (23 cm) glass pie plate, with the other sheet facing up. Press the crust into the plate without stretching it, then peel off the top parchment.
- Fill the pie shell with the apple mixture.
- For a lattice top, cut the second crust into strips and weave them over and under each other. Or cover the pie with the whole second round of dough.
- Trim the dough to 1 cm beyond the edge of the pie, fold the overhang under and pinch to seal. Brush with cream and sprinkle with sugar. Bake on the lower rack, set on a metal baking sheet, for 45–55 minutes, until the crust is golden.
- Let the pie cool completely before serving; it can be made a day ahead and reheated slice by slice.
