- White fish2 x 180 g
- Sake1 tsp
- Salt
- White pepper
- Scallion½ cups
- Ginger2 tbsp
- Chili pepper1 tbsp
- Soy sauce2 tsp
- Sesame oil2 tsp
- Peanut oil2 tbsp
Instructions
- Preheat the oven to 200°C (400°F, 180°C fan).
- Lay a 25cm (10") piece of foil on the counter and place a slightly smaller piece of baking paper on top. Put the fish on the paper.
- Sprinkle a small pinch of salt and white pepper on each side of the fish. Drizzle each fillet with 1/2 tsp sake.
- Fold the paper around the fish to form a parcel, then wrap it in the foil.
- Place the parcels on a tray and bake for 12 minutes, or until the fish reaches 55°C (130°F) at the centre or flakes when opened.
- Unwrap each parcel onto a plate and fold the sides down to make a boat. Rest for 3 minutes.
- While the fish rests, heat the peanut oil in a small pan over medium heat until hot.
- Top the fish with green onion, ginger and chilli. Drizzle with soy sauce and sesame oil, then pour the hot oil over the top so it sizzles. Serve immediately.
