Slow Cooker Jerk Pork

Ingredients

Instructions

  1. Rinse the pork with the lime or lemon juice and cool water, then pat it dry.
  2. Rub the jerk marinade all over the pork, working it into the crevices.
  3. Heat the vegetable oil in a wide pan over medium heat and brown the pork on all sides, about 4 minutes per side.
  4. Move the pork to the slow cooker.
  5. Pour off most of the oil, lower the heat to low, and deglaze the pan with the apple juice, scraping up the browned bits. Bring to a boil, then turn off the heat and pour the liquid into the slow cooker.
  6. Add the salt, orange wedges, onion, bay leaves, brown sugar, pimento berries, thyme, celery and any optional ingredients to the slow cooker.
  7. Cover and cook 4 1/2 hours on high or 7 to 8 hours on low, turning the pork after about 3 hours.
  8. Test the pork at 4 hours on high: it is ready to slice when tender. Cooking to 4 1/2 hours on high makes it fall apart like pulled pork.
  9. Rest the pork about 15 minutes before slicing or shredding.
  10. Strain the liquid, discard the solids, and skim off the fat. Reduce the liquid if you want a thicker sauce or gravy.
