- Bay leaf2
- Brown sugar1 cda.
- Pimento berries1 cdta.
- Thyme6 ramitas
- Celery2 tallos
- Chile scotch bonnet1
- Maple syrup2–3 cdas.
- Scallion2 cdas.
Preparación
- Rinse the pork with the lime or lemon juice and cool water, then pat it dry.
- Rub the jerk marinade all over the pork, working it into the crevices.
- Heat the vegetable oil in a wide pan over medium heat and brown the pork on all sides, about 4 minutes per side.
- Move the pork to the slow cooker.
- Pour off most of the oil, lower the heat to low, and deglaze the pan with the apple juice, scraping up the browned bits. Bring to a boil, then turn off the heat and pour the liquid into the slow cooker.
- Add the salt, orange wedges, onion, bay leaves, brown sugar, pimento berries, thyme, celery and any optional ingredients to the slow cooker.
- Cover and cook 4 1/2 hours on high or 7 to 8 hours on low, turning the pork after about 3 hours.
- Test the pork at 4 hours on high: it is ready to slice when tender. Cooking to 4 1/2 hours on high makes it fall apart like pulled pork.
- Rest the pork about 15 minutes before slicing or shredding.
- Strain the liquid, discard the solids, and skim off the fat. Reduce the liquid if you want a thicker sauce or gravy.
