Ingredients

Instructions

  1. Mix the brown sugar, chilli powder, salt and cumin in a small bowl to make the rub. Set aside.
  2. Peel and quarter the onions, peel the garlic, and place both in the bottom of the slow cooker.
  3. Remove the skin and any hard fat from the pork shoulder if this has not been done already.
  4. Rub the spice mix over all sides of the pork, pressing it in with clean dry hands. Place the pork on top of the onions and garlic.
  5. Add chicken stock until the liquid reaches about 1/4 to 1/3 of the way up the pork.
  6. Cover and cook on low for about 8 hours or on high for about 6 hours.
  7. Lift off the lid and test the pork with a fork or knife. If it offers no resistance, it is ready; if it feels tough, cook longer, checking every 30 minutes until it pulls apart easily.
  8. Take out the pork and shred it with two forks. Remove the liquid and onions from the slow cooker, then return the shredded pork. Stir in the BBQ sauce and cook on high for about 30 minutes to heat through. Serve.
