- Onion1
- King oyster mushroom2
- Curry · powder2 tbsp
- Udon noodle2
- Mirin2 tbsp
- Soy sauce2 tbsp
- Mushroom½ tsp

Instructions
- Put the kombu, the dried mushrooms and 2½ cups of water in a small saucepan over medium heat. Turn off the heat just before it boils.
- Strain into a large bowl or cup, setting the mushrooms and kombu aside. You should have about 2¼ cups of dashi.
- Heat a tablespoon of oil in a large non-stick skillet. Fry the mushrooms until a thin brown crust forms and they smell fragrant. Push them to one side and cook the onion until soft, adding more oil if needed.
- Stir in a tablespoon of curry powder until combined.
- Add the dashi, mirin, soy sauce, mushroom seasoning, sugar (if using) and the udon. Cover and cook until the flavours blend and the udon is cooked through.
- Mix 1 teaspoon of cornstarch with 1 tablespoon of water until smooth.
- When the sauce has reduced to about half, stir in the cornstarch mixture to thicken it.
- Taste and adjust the seasoning. Top with chopped scallions before serving.
